Summer and winter squash types are defined by days to maturity and harvest seasons. In Australia we tend to seperate zucchini and pumpkin from the squash segment. While summer squash is harvested and consumed fresh during summer, winter squash can be stored for extended periods and is harvested and eaten into the late winter.
