Endive

Endives are a lettuce like, leaf green type. Part of the chicory family, the two types of endive are; the curly frisees known simply as endive; and the flat leaf types known as escaroles.

As chicories, both have a mild ‘bitter’ much sought after in culinary and cultural spheres, these bittersweet flavours vary from variety. Both types are also often presented with blanched centres, some are self blanching while others are blanched by other means depending on level of production, such as covering with cloches or tying.
