Smarties.Bio Puntarelle Slicer

Natively known in Italy as a tagliapuntarelle , this traditional, single-purpose kitchen tool is a specialised cutter, constructed from layers of birch plywood and features an internal grid of thin, intersecting stainless steel wires.

It is designed specifically to process puntarelle, a type of chicory grown in Italy. By pushing the young, hollow shoots longitudinally through the wooden block with the rivet side facing up, the tool cuts them into thin matchsticks. These sliced shoots are then submerged in ice water to make them curl, preparing them to be tossed in a classic anchovy dressing for the traditional Puntarelle alla Romana salad.
